Raw Artisan Wildflower Honey – Pure & Unfiltered

The color really does shift with the seasons, and I love that I can taste the difference between jars. It's unfiltered too, so there's actual texture and depth instead of that flat syrupy stuff from the supermarket.

The little crystals that formed on top tell me this batch wasn't over-processed, and a quick warm-water bath smoothed them right out. You can actually taste which flowers were in bloom — the flavor shifts jar to jar and I'm here for it.

The color of this jar is noticeably darker than the last one I bought, which is exactly what they mean about it changing with the seasons. It's thick and crystallized in spots, and a spoonful in my morning tea tastes floral rather than just sweet.
